Corn Salsa

Grilled Corn Salsa

Ingredients:

1 can whole corn kernels, drained
2 tomatoes
10 fresh basil leaves
1 tablespoon olive oil
juice of 1 lime
1 tablespoon chopped garlic
salt and pepper to taste
Breton, or Garden Vegetable Minis

Preparation:

Coarsely chop tomatoes and basil and combine in bowl with corn, oil, lime juice, garlic, salt and pepper. Mix well. Chill and serve with Dare Crackers.

Helpful hints:

You may use grilled corn for extra flavor. Simply place two ears of corn (still in husks) on a hot grill, and cook until black on all sides. When cool, remove husks and slice kernels from ears into salsa mixture.
